Pizza Bob's began as a simple conviction: that a great pizza doesn't need fancy tricks — just quality ingredients, real technique, and the patience to do it right. Bob started in his own kitchen, perfecting a dough recipe that would become the backbone of everything we serve today.

What started as weekend gatherings for neighbors grew into a restaurant that the whole community claims as its own. We still make every pie by hand, stretch every crust the old way, and fire each one in our wood-burning oven until the edges blister and char just right.

Today, Pizza Bob's remains a family-run institution on North Defiance Street — a place where regulars know your name, where kids get a seat at the counter, and where every slice carries the same care Bob brought to that first oven in 1987.
